The defending champion Romanian who was beaten by the American here in the quarter-finals last year, filed that memory away with her win to reach the fourth round.
Halep improved her career-best win streak to 17 straight matches, a run which includes titles in Dubai, Prague and Rome.
2019 Roland Garros semi-finalist Anisimova came to the third-round encounter having lost just four games in her two opening matches.
Halep grabbed the opening set to love in 234 minutes before her 29th-ranked opponent was able to get a game on the scoreboard.
